Salmon-Papaya Tartare

INGREDIENTS FOR 4 PEOPLE

  • 2 boneless salmon fillets, skinless (or for quick prep smoked salmon)
  • 1 1/2 tbsp. KÜHNE Gin Cornichons
  • 4-5 KÜHNE Gin Cornichons
  • 1 papaya (sub in your favourite seasonal fruit such as mango or melon)
  • 1 tbsp. fresh lime juice
  • 1 bunch green onions
  • 1/2 tbsp. grapeseed or vegetable oil
  • 1/2 tsp. minced chili
  • 1 1/2 tbsp. minced shallots
  • Salt and freshly ground black pepper

PREPARATION

Thinly slice salmon lengthwise into pieces.
Place salmon in a medium bowl.
Slice cornichons in half.
Papaya (or your favourite seasonal fruit) – Peel and remove seeds, dice.
Slice the onions, mince chili and shallots.
Mix all ingredients with the salmon.
Season tartare to taste with salt and pepper.
